Easy Amish Friendship Bread

If you love Amish Friendship bread, but don’t have to time to keep up with all of the starter bags and such, you’ll love this recipe. It’s one of our family’s favorites, and fits in wonderfully with the busy Christmas season. We hope it will become one of your family’s favorites as well.

Easy Amish Friendship Bread:
1 cup of vegetable oil
1 1/2 cups sugar
1 teaspoon vanilla extract
3 large eggs
1/2 teaspoon salt
2 teaspoons cinnamon
2 1/2 cups flour
1 1/4 cups milk
1/2 teaspoon baking soda
1 – 3.4 ounce box instant vanilla pudding
1 1/2 teaspoons baking powder

Preheat oven to 325 degrees. Combine oil, sugar, vanilla, eggs, salt, and cinnamon in a large bowl. Add flour, milk, soda, pudding, and baking powder. Mix well. Grease two large loaf pans and sprinkle with a mixture of sugar and cinnamon. Pour bread mixture into pans and sprinkle with any leftover cinnamon and sugar. Bake for one hour.

Variation: Instead of topping with cinnamon and sugar, try a mixture of apple butter and brown sugar. Mix 1/4 cup apple butter with 1 tablespoon of brown sugar. Spoon mixture down the middle of the bread when it is about half way through baking and just beginning to set up.
