Mornin’ Muffins
1/2 Cup seedless raisins
1/3 Cup walnut halves (optional)
2 Cup all-purpose flour
1/2 Cup granulated sugar
1 Tablespoon cinnamon
1 1/2 Teaspoons baking soda
1/4 teaspoon salt
1 medium carrot, grated
1 Granny Smith apple, grated
3/4 Cup unsweetened applesauce
3 eggs
1/4 Cup oil
6 Tablespoons butter, melted
1 Tablespoon lemon juice
1 Teaspoon pure vanilla extract
1/3 Cup brown sugar and 1 Teaspoon cinnamon, mixed together for sprinkling.
Preheat oven to 350 F. Brush insides of a muffin tin with oil or line with paper liners.
Sift flour, granulated sugar, cinnamon, baking soda and salt into a medium bowl. Mix and set aside. In a separate medium bowl, combine raisins, carrots, apple, applesauce, eggs, oil, melted butter lemon juice and vanilla extract. Mix until just combined. Add dry ingredients and continue stirring just until all dry ingredients are moistened. Don’t over mix!!
Scoop batter into muffin tin, filling cups to the top. They will nearly overflow!! Sprinkle brown sugar - cinnamon mixture over muffins. Bake on center rack of oven for 40-45 minutes. Muffins will be a deep brown when finished. Let cool in pan for 20 minutes before removing from pan!
